Chef

I found my love for cooking in Cape Town, South Africa where I was born and raised. The unique flavors of the Cape captured me at a young age and inspired me to study the art of cooking at the Bill Stafford Culinary School. The passion for food took me from Africa to London, England and eventually to Banff, Canada. At the Maple Leaf Grill, I am able to use my influences to create a unique menu using Canada’s best and freshest food sources. The vast landscape and the blend of cultures inspire me to create new dishes that reflect what is Canadian now. From the time I arrived at the Maple Leaf Grill I knew if would be a place where I could grow professionally. Living in Banff National Park is a long way from the beaches I left behind. I have gone from surfing big waves to hiking the Canadian mountains and riding the powder snow Banff is famous for. I believe in three words, “Good simple food”. As a Chef I am privileged to spend time doing what I love.
We are how we present ourselves and I would like to think my food is a good interpretation of who I am.
