Hot Chocolate Souffle
High Quality Dark Chocolate 455gr
Unsalted Butter 340gr
Cornstach 6tbsp
White Granulated Sugar 570gr
Whole Eggs 400gr
Egg Yolks 160gr
Grand Marnier 1 tbsp
Method
1. Melt chocolate and butter in a double boiler over low heat
2. Whisk together cornstarch and sugar
3. Stir the chocolate mixture into the cornstarch and sugar (do not whip)
4. Add eggs, yolks and G.M. and stir until smooth (about 2 minutes)
5. Refrigerate overnight
6. When ready to serve, place in a 6oz souffle mix into a 8oz ramekin
7. Place ramekin into a preheated 420 degree oven for 15 minutes
8. ENJOY!!!!
